Ingredients:

  • 3 eggs
  • 3/4 cup oil
  • 2 tsp vanilla
  • 2 1/2 cups grated apples
  • 2 cups sugar
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 3 cups flour

Directions:

  1. Preheat oven to 350F Grease two muffin tins Combine eggs, oil, vanilla Mix well.
  2. Combine dry ingredients Add to egg/oil mixture and mix well Stir in apples last.
  3. Bake for 20-25 mins.
