Fruity Banana and Applesauce Muffins

Ingredients:

  • 1/8 cup molasses
  • 1/4 cup brown sugar
  • 1 egg
  • 1 cup bananas
  • 1 pinch of salt
  • 1 tsp cinnamon
  • 1/3 cup blueberries
  • 1 cup flour
  • 1 cup oatmeal

Directions:

  1. Grind the oatmeal in a food processor
  2. Add flour, salt and baking powder to food processor and give it a quick spin or two
  3. Mix wets, including mooshed banana and brown sugar
  4. Mix fruit and nuts stir them with a bit of flour (I use frozen fruit so it doesn't get yucky at this point)
  5. Add wets to flour mix and mix - taking care not to overmix.
  6. Add fruit and nuts to whole thing
  7. Bake in minimuffin things for about 12 minutes at 375
