Fruit Nut Bread

Ingredients:

  • 1/2 cup dried apricot
  • 1 large orange
  • 1/2 cup raisins
  • 2 cups flour
  • 1 cup sugar
  • 1/4 tsp salt
  • 1 egg
  • 1 tsp vanilla

Directions:

  1. Preheat oven to 350. Grease and flour loaf pan.
  2. In a bowl, cover apricots and raisins with water and soak for 1/2 hour. Drain.
  3. Squeeze orange, and add enough hot water to make 1 cup.
  4. Reserve half of the orange peel.
  5. In food processor, chop apricots,orange peel, and raisins.
  6. Sift together flour, powder, soda, sugar, and salt.
  7. Add fruits, nuts, and juice.
  8. Beat together egg, butter, and vanilla.
  9. Add to batter.
  10. Pour into loaf pan.
  11. Bake at 350 for 50 minutes.
  12. Cool 10 mins then remove from pan to rack until completely cool.
