French-toasted Banana Sandwich

Ingredients:

  • 1 tbsp peanut butter (optional)
  • 4 slices white bread
  • 2 eggs
  • 1/3 cup milk
  • 1/2 tsp vanilla
  • 1/8 tsp cinnamon
  • 1 pinch salt
  • 3 tsp butter

Directions:

  1. Spread peanut butter (if using) over the bread slices.
  2. Slice each banana lenghwise into 4 pieces; sandwich between bread slices.
  3. In a pie plate, whisk together the eggs, milk, vanilla, cinnamon and salt; add sandwiches turning to soak up mixture.
  4. In a skillet heat the butter over med-high heat.
  5. Cook sandwiches for 5 minutes, or until browned on both sides.
