Banana Nut Crumb Cake

Ingredients:

  • 1 cup banana, mashed (apprx 2 large)
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 eggs
  • 1/3 cup sour cream
  • 2 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 2 cups flour
  • 3/4 tsp baking soda
  • 2 cups flour
  • 1 cup brown sugar , packed
  • 1/2 cup walnut pieces
  • 2 -3 tbsp confectioners' sugar

Directions:

  1. Preheat oven to 350.
  2. Line a 9x13 baking pan with nonstick foil that extends over the end of the pan.
  3. Crumb Topping:.
  4. Mix flour and brown sugar in bowl.
  5. Cut in butter until mixture resembles coarse crumbs.
  6. Stir in nuts.
  7. Set aside.
  8. Cake:.
  9. Mix mashed bananas, oil, sugar, eggs, sour cream, vanilla, cinnamon and salt with whisk until well combined.
  10. Stir in flour, and baking soda until blended.
  11. Spread evenly into lined pan.
  12. Sprinkle with crumb topping.
  13. Bake at 350 for 40 minutes or until toothpick inserted in center comes out clean.
  14. Cool completely in pan on wire rack.
  15. Lift foil by end onto a cutting board.
  16. Cut into squares and sprinkle with confectioner's sugar.
