Ingredients:

Directions:

  1. In a large bowl stir the honey and yeast into the water, and set aside for 10 minutes.
  2. In a seperate bowl combine the flours, bran and flax seeds.
  3. After 10 minutes mix the oil and salt into the yeast mixture, then add the 3/4 flour mix and blend with a fork until smooth.
  4. Turn the dough onto a floured work surface and work in the remaining flour mix.
  5. Knead, until you have smooth, springy dough, 10 to 15 minutes.
  6. Cover with a tea towel and set in a warm place to rise to double, about 45 minutes.
  7. Punch the dough down, shape and place in loaf pan.
  8. Let rise again 30 minutes and bake at 400ºF/200ºC for 25 minutes until done.
  9. For an extra touch brush the loaf with an omega-3 egg yolk/milk wash and sprinkle with flax seeds before you bake it.
  10. Let the bread cool a little before slicing to serve.
