Fig-Walnut Sweet Potato Casserole Boats

Ingredients:

  • 4 medium sweet potatoes
  • 1/4-1/2 cup chopped walnuts
  • 1 cup corn syrup
  • 1 tsp vinegar
  • 1/2 cup brown sugar
  • 1/2 tsp salt
  • 4 tsp butter

Directions:

  1. Bake sweet potatoes until done-around 1 hour.
  2. Mince figs.
  3. When cool enough to handle scoop out potatoes and place in a large bowl-reserve jackets.
  4. Add remaining ingredients except butter and whip well.
  5. Restuff jackets and dot tops with 1/2 t.
  6. Butter each.
  7. Bake at 350 for around 20 to 30 minutes.
