Ingredients:

Directions:

  1. In a large pot,, bring stock and water to a boil.
  2. Add potatoes and bring back to a boil.
  3. Simmer gently for 20 minutes.
  4. Drain and put back in pan.
  5. Cover with a clean dish towel for a few minutes to get rid of excess moisture.
  6. Put green onions in a saucepan with pepper and milk.
  7. Simmer for five minutes and then drain, reserving milk
  8. Mash potatoes until smooth, stirring in enough milk to create creamy consistency.
  9. Stir in scallions and chives.
  10. Season with salt.
  11. Put potatoes in a serving dish.
  12. Make a well in the center and pour in hot melted butter.
