Feather Light Buttermilk Wheat Pancakes

Ingredients:

  • 1 1/2 cup buttermilk
  • 1 1/2 cup wheat flour
  • 2 tbsp. oil
  • 2 tsp. vanilla
  • 3 eggs
  • 1/2 salt
  • 1 tbsp. baking powder

Directions:

  1. Saperate Eggs
  2. Combine buttermilk and egg yolks in bowl and beat until foamy.
  3. Combine the dry ingredients: wheat flour, baking powder and salt
  4. Add remaining ingredients, except egg whites, stir till smooth. Beat egg whites until stiff. Fold egg whites into batter. Might need a little more buttermilk. If its to thick add more buttermilk ( I used lite buttermilk)
