Ingredients:

Directions:

  1. Plump raisins.
  2. Mix all dry ingredients in a large bowl and make a well in the centre.
  3. Beat eggs and egg whites in a seperate, medium sized bowl and add all liquid ingredients.
  4. Add to dry mixture and mix well.
  5. Refrigerate overnight.
  6. Preheat oven to 350deg.
  7. Stir batter well and fill regular muffin tins 2/3 full.
  8. Bake for 17-20 minutes.
  9. Batter will keep well in fridge at least one week.
