Eggplant Parmesan

Ingredients:

  • 1 cup sauce
  • 1 cup fiber 1
  • 1/4 cup egg beaters

Directions:

  1. Grind up the Fiber One cereal to the consistency of breadcrumbs and season with Italian seasonings.
  2. Cut the ends off the eggplant and slice in 1/2 inch slices lengthwise.
  3. Dip slices in egg beaters and then coat with breadcrumb style mixture.
  4. Bake in oven on 375 for 30 minutes.
  5. Flip and bake for 10 more.
  6. Layer the sauce, eggplant, cheese, and repeat.
  7. Cover with foil and bake for 25 more minutes.
  8. NOTE: I used a spaghetti/pizza sauce with approx 80 calories per cup. I tried to find the closest ingredient match possible.
