Eggless Banana Bread

Ingredients:

  • 1 cup mashed bananas (about 3 piece)
  • 1 1/2 cup sugar
  • 1/2 cup milk mixed with 2 tbsp lemon juice
  • 1 tsp vanilla
  • 2 cups flour mixed with 1 tsp baking powder
  • 1 cup walnut (or in our case i use peanuts but this is optional)

Directions:

  1. Preheat oven 180*C
  2. Cream butter/shortening and sugar
  3. Gradually add milk+lime mixture
  4. Blend in vanilla
  5. Fold in mashed banana alternating with flour mixture
  6. Pour batter on a greased loaf pan
  7. Bake 15-20mins or until golden brown
  8. Leave in pan for a few minutes before taking the bread off
  9. **cool completely before storing in freezer (that is if you'll have something left to keep :D) or serve hot with a cold glass of OJ.... hmmmmm i love it that way..
