Directions:

  1. Preheat oven to 325 degrees.
  2. Grease and flour two 9 round cake pans. Set aside.
  3. In a large mixing bowl, sift together flour, cocoa, baking powder, baking soda, and salt.
  4. Add sugar and whisk until combined.
  5. Add eggs, coffee, buttermilk, vanilla, and oil.
  6. Beat on medium speed for 2 minutes.
  7. Pour batter into prepared cake pans.
  8. Bake for 25-30 minutes or until inserted toothpick comes out clean.
  9. Cool layers in pans for 10 minutes then turn out onto wire rack.
  10. Cool completely.
  11. Frosting:
  12. In a large mixing bowl, beat butter and vanilla extract until creamy.
  13. Add powdered sugar. Beat on low speed until combined.
  14. Slowly add milk while beating until mixture reaches desired spreading consistency.
  15. Turn mixer to high and whip frosting for two minutes.
  16. Spread on cake layers.
  17. Serve and enjoy!

  19. Frosting makes a great filling for homemade whoopie pies and sandwich cookies.
