  1. Melt butter in large heavy saucepan over medium-high heat. Add onion, bell peppers,garlic, and sausage. Cook for 5 minutes or until vegetables are tender,stirring often.
  2. Stir in rice, chicken broth, Tabasco sauce, tomatoes, and cajun seasoning to taste. mix well and bring to a boil.
  3. Reduce heat, cover, and simmer 25 minutes or until rice is tender.
  4. Remove from heat and let stand 5 minutes longer before fluffing with a fork.
