Easy and Light Chicken Piccata

Ingredients:

Directions:

  1. Prepare flour with salt and pepper if desired.
  2. In a large skillet or electric frying pan, heat oil.
  3. Dredge chicken in flour and lightly brown in oil, with the onion and garlic.
  4. Cook on low and do not let the garlic get too brown.
  5. Drain off any oil.
  6. Add chicken broth and dried parsley.
  7. Simmer for 5 - 10 minutes.
  8. This will thicken in it''s own juices.
  9. Just before serving, add lemon slices to each piece of chicken and cover for 1 minute.
  10. Remove immediately and serve over rice or pasta.
  11. For more lemon flavor, squeeze lemon into gravy while simmering for the one minute.
