Ingredients:

  • 1 1/2 cups corn oil
  • 2 cups sugar
  • 3 eggs
  • 2 cups flour
  • 2 tsp cinnamon
  • 2 tsp vanilla
  • 2 tsp salt
  • 1 cup coconut
  • 2 jars carrot baby food ( jr. size)
  • 1 cup nuts

Directions:

  1. Combine all ingredients in a large bowl.
  2. Mix with a wooden spoon by hand until all ingredients are thoroughly mixed.
  3. Pour into a greased and floured 9 x 13-inch pan.
  4. Bake at 350 degrees for 1 hour.
  5. Frost with cream cheese frosting.
  6. Sprinkle with 1/2 cup ground nuts.
