Ingredients:

Directions:

  1. Preheat oven to 350 degrees F.
  2. Slice pork loin into chops about 3/4-inch-thick. Coat lightly with House Seasoning and seasoning salt. Coat with Jerk Spice, being sure to cover all sides. Bake until cooked through, about 30 minutes.
  3. House Seasoning:
  4. 1 cup salt
  5. 1/4 cup black pepper
  6. 1/4 cup garlic powder
  7. Mix ingredients together and store in an airtight container for up to 6 months.
  8. Yield: 1 1/2 cups
  9. Jerk Spice:
  10. 1 tablespoon kosher salt
  11. 1 teaspoon ground allspice
  12. 1 teaspoon brown sugar
  13. 1 teaspoon garlic powder
  14. 1 teaspoon onion powder
  15. 1/2 teaspoon dried, crushed Scotch bonnet pepper
  16. 1/2 teaspoon paprika
  17. 1/2 teaspoon dried chives
  18. 1/2 teaspoon ground nutmeg
  19. 1/2 teaspoon freshly ground black pepper
  20. 1/2 teaspoon ground ginger
  21. 1/4 teaspoon ground cinnamon
  22. 1/4 teaspoon ground cloves
  23. 1/4 teaspoon dried thyme
  24. Combine all ingredients in a bowl until well-mixed. Store in an airtight container.
  25. Yield: 1/2 cup
