Dj Bakers Carrot and Zucchini Slice

Ingredients:

  • 3/4 cup coconut
  • 3/4 cup dates (chopped )
  • 1/2 cup oats
  • 2 tblsp peanut butter
  • 1 tblsp honey
  • 4 eggs

Directions:

  1. Mix all dry ingredients, dates and vegies (squeeze moisture out of vegies) together, heat PB and honey together then add and mix. Add beaten eggs. Mix well and try the mixture before baking because its yummy.
  2. Bake at 200oC in slightly oiled cake slice tin for about 20 mins (or a bit less for a bit longer if your mixture is pretty moist.)
