Deliciously Homemade Fruit And Oat Bars

Ingredients:

  • 1/3 lb shortening
  • 3/4 cup sugar
  • 1/2 tbsp salt
  • 8 oz (1 3/4 cups) whole wheat flour
  • 4 oz (1 cup + 2 tbsp) all-purpose flour
  • 1 tbsp cinnamon
  • 2 tbsp wheat germ
  • 2 1/2 cups quick oats
  • 1/3 cup melted butter
  • 1/3 cup canola oil
  • 1 1/2 cups (12 oz) all-fruit strawberry jam
  • 1 tsp grated orange zest
  • 1 tbsp water

Directions:

  1. Preheat oven to 375 degrees. Grease two 9 pans.
  2. In a large bowl, beat together shortening and sugars until well blended.
  3. In a medium bowl, whisk together baking powder, salt, flours, cinnamon, flaxseed and wheat germ. Beat into the sugar mixture until the blend resembles coarse crumbs.
  4. Add oats and fold in by hand, then stir in the melted butter, canola oil and vanilla until the mixture is crumbly.
  5. Press 1/4 of the mixture into the bottom of each prepared pan.
  6. In a bowl, combine jam, orange zest and water until well blended.
  7. Spread evenly over the crumb mixture.
  8. Cover with remaining crumb mixture and pat firmly in place.
  9. Bake for 20 minutes, or until top is very light brown.
  10. Cool completely before cutting each pan into 8 bars.
