Molasses Ginger Cookies

Ingredients:

  • 1 1/2 cups shortening
  • 2 cups sugar
  • 1/2 cup molasses
  • 2 eggs
  • 1/2 tsp salt
  • 1 tsp lemon zest
  • 2 tsp cinnamon
  • 1 1/2 tsp cloves
  • 2 tsp ginger
  • 4 cups flour
  • 1/2 cup coarse sugar

Directions:

  1. Cream shortening and sugar.
  2. Add eggs.
  3. Stir in the remaining ingredients except the coarse sugar.
  4. Using a 1 scoop, form the dough into balls and then roll each ball in the coarse sugar.
  5. Bake at 350 degrees on a parchment lined baking sheet for approximately 12 minutes or until set and just starts to brown.
  6. Cool on a wire rack.
