Delicious Spinach With Shallots

Ingredients:

  • 1 tbsp olive oil
  • 2 garlic cloves (or to taste)
  • 1 (10 oz) bag baby spinach leaves
  • 1/2 tsp kosher salt (to taste)
  • 1/2 tsp pepper, freshly ground ( add to taste)
  • 2 tsp balsamic vinegar (optional, add to taste. i use more)

Directions:

  1. In a large skillet, heat olive oil over medium heat. Stir in shallots and garlic and cook until transparent, about 5 minutes.
  2. Add spinach, sprinkle with salt and pepper; cook and stir 3 to 5 minutes until leaves are wilted and reduced. If using balsamic vinegar, add it in during the 3-5 minute cooking timeframe.
