Ingredients:

Directions:

  1. In small bowl, combine dates, boiling water and soda. Stir and cool.
  2. In large bowl, beat egg lightly. Add sugar, salt and vanilla, beat to mix.
  3. Stir in dates mixture.
  4. In separate bowl, mix flour and baking powder and pour into date mixture, stir to mix.
  5. Stir in nuts and melted butter.
  6. Pour into greased 9x5x3 loaf pan. let it stand for 20 min. then bake in 350 degreesF for about 45 minutes or until toothpick comes out clean.
  7. Cool for 10 minutes before removing from the pan.
  8. FOR A DELIGHTFUL COMBINATION: Date and pineapple loaf
  9. Add ... 1 C. crushed pineapple with juice....heat pineapple in saucepan until hot or simmered. remove from heat.
  10. Add to date and soda mixture. stir and cool. Then follow the rest of date loaf recipe.
