Curried Chicken Salad With Marionberries

Ingredients:

Directions:

  1. Heat olive oil in nonstick cooking pan.
  2. Add chicken breasts and sauté for 5 minutes.
  3. Turn over and sauté 5 more minutes.
  4. Season with salt and pepper.
  5. Remove from pan and cool in refrigerator 30.
  6. Cut meat into 1/2 cubes.
  7. Combine mayonnaise, wine, chutney, curry powder, lemon juice and ginger.
  8. Add chicken, onions, celery, raisins and marionberries then toss to coat.
  9. Season with salt and pepper.
  10. If using frozen berries allow to sit in refrigerator for 1/2 hour before serving.
  11. Immediately before serving add cashews.
  12. Serve on a bed of lettuce or in pocket bread.
