Directions:

  1. Salad
  2. Toss vegetables into a large bowl as you prepare them
  3. Vinaigrette
  4. In a small bowl, whisk together the vinegar, mustard, garlic, cumin, 1 tsp salt and a few grinds of fresh pepper
  5. Slowly drizzle in the olive oil in a thin, steady stream, whisking as you go
  6. This will form an emulsion and thicken the dressing
  7. Stir in parsley and mint
  8. To Assemble
  9. Just before serving pour the vinaigrette over the salad and toss until everything is evenly coated
  10. Taste to see if a little more salt is needed and serve.
