Creamy Gelatin Dessert

Ingredients:

  • 1 (6 oz) package lemon gelatin
  • 2 cups miniature marshmallows
  • 4 large bananas , cut into 1/4 inch slices
  • 1 (20 oz) can crushed pineapple
  • 2 cups cold water
  • 1/2 cup sugar
  • 2 tbsp flour
  • 2 tbsp butter

Directions:

  1. Dissolve gelatin in boiling water.
  2. Stir in marshmallows until melted.
  3. Stir in bananas.
  4. Drain pineapple, reserving juice.
  5. Add pineapple and cold water to gelatin mixture and mix well.
  6. Pour into a 13 x 9 pan and chill until set.
  7. In small saucepan, combine sugar and flour, then gradually stir in reserved pineapple juice.
  8. Add butter and bring to a boil.
  9. Cook and stir for 2 minutes.
  10. Remove from heat and cool to room temperature, about 40 minutes.
  11. Whip the cream and fold into the cooled pineapple juice mixture.
  12. Spread over gelatin and sprinkle with walnuts.
  13. Chill for 1 to 2 hours.
