Ingredients:

  • 5 large mashed bananas (the riper, the better)
  • 4 eggs
  • 1 cup oil
  • 2 cups sugar
  • 3 1/2 cups flour
  • 2 tbsp baking soda
  • 1 tsp salt

Directions:

  1. Beat sugar and oil, then add bananas and beat until well mixed.
  2. Add eggs one at a time, beating well until blended.
  3. Add dry ingredients and mix.
  4. Mix in nuts.
  5. Bake in 2 greased loaf pans at 325 for 1 hour.
