  1. Put the frozen spinach block into a pan of hot tap water. Let it sit while you do the other things.
  2. Cut the bacon strips into 1-inch pieces. In a medium fry pan, fry the bacon until nearly done the way you like it. Add the garlic and fry until the bacon is nicely done. Don't drain the bacon grease.
  3. Remove the partially frozen block of spinach from the water. Cut it into 2-inch squares and add to frypan.
  4. Add the can of tomatoes and the liquid. Stir well. Increase heat to boiling, then reduce heat to simmer. Let simmer for 5 minutes. Stir occasionally
  5. Add cream. Simmer, stirring often, until thickened the way you like it.
  6. Season to taste with salt and pepper.
  7. I like this with rice. Fine side for a pot roast.
