Cream Of Broccoli Soup

Ingredients:

  • 2 bunches fresh broccoli
  • 2 qts chicken stock or chicken flavored boulion for vegetarian
  • 4 tbsp butter
  • three tbsp flour
  • 1 small onion
  • 1/4 tsp nutmeg
  • 1/4 tsp pepper
  • salt to taste

Directions:

  1. Cut broccoli into florets and set aside
  2. Cook stems etc. in broth until tender.
  3. Remove from broth and puree in blender
  4. Make a rue of flour and butter
  5. Add broth, nutmeg and seasonings
  6. Add pureed broccoli
  7. Steam florets just til tender
  8. Stir broth mixture til just begins to thicken
  9. Add half and half
  10. Stir
  11. Add florets and serve with crusty bread.
  12. This is really delicious
