  1. Preheat oven to 350°F Grease a 9x5 loaf pan with cooking spray.
  2. In a medium bowl, combine flour, bran, sugar, dry milk, baking powder, and cinnamon. Whisk to blend.
  3. In a large bowl, whisk together buttermilk, honey, and egg whites until well blended.
  4. Add the dry ingredients to the wet ingredients, folding together until nearly blended. Fold in the cranberries and orange zest.
  5. Scrape the batter into the prepared pan and bake for about 50 minutes, until the center springs back when touched gently on top and a toothpick inserted int he center comes out clean. Let cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
