Orange Cranberrie Pecan Bread

Ingredients:

  • 1 egg
  • 2 1/2 cups flour
  • 2/3 cup orange juice
  • 1/3 cup milk
  • 1/2 tsp. salt
  • 3/4 cup coarsly chopped fresh or frozen cranberries
  • 1/3 cup chopped pecans optional

Directions:

  1. Heat oven to 375 F
  2. In large mixing bowl combine butter, sugar, egg, orange peel.
  3. Beat at medium speed until well mixed, scraping sides 1-2 minutes
  4. Add flour, orange juice, milk, baking poweder, salt
  5. Beat well at medium speed until well mixed, scraping sides 1-2 minutes
  6. By hand, stirr in cranberries and pecans
  7. Spoon into greased pan
  8. Bake large loafs 50-60 minutes, medium loafs 30-40 minutes, and mini loafs 18-22 minutes
  9. Sprinkle with sugar after baking for sparkle
