Cranberry Nut Bread

Ingredients:

  • 3/4 cup chapped pecans (or walnuts)
  • 1 cup + 2 tbsp sugar
  • 1 3/4 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1/3 cup orange juice
  • 1/4 cup water

Directions:

  1. Pre-heat oven to 350
  2. Sift dry ingredients together
  3. Make a well in the center of the dry ingredients and add the liquids all at once. I mix them in a glass measure, then pour in the semi-cooled butter.
  4. Stir only enough to moisten dry ingredients.
  5. Add nuts and cranberries and orange rind.
  6. Turn into 2 small loaf pans (4x9) lined with waxed paper
  7. Bake at 350 for 50 minutes or until a tester comes out clean.
  8. Cool 10 minutes in the pan before turning out on to a cake rack.
  9. Remove waxed paper and completely cool on the rack before wrapping in foil.
  10. Serve sliced with butter or cream cheese, or give loaf as a gift!
