Cold Cherry Mousse With Vanilla Sauce

Ingredients:

Directions:

  1. Prepare whipped topping mix according to package directions using milk and vanilla.
  2. Set aside.
  3. Combine gelatin and sugar in a small saucepan, stir in water.
  4. Let stand 5 minutes to soften.
  5. Heat over low heat until gelatin is completely dissolved.
  6. Cool to room temperature.
  7. Set aside 1 cup of cherries without juice, for garnish.
  8. Place remaining cherries and juice into a blender.
  9. Add lemon juice and gelatin mixture.
  10. Process until blended.
  11. Fold cherry purée into whipped topping until no streaks of white show.
  12. Pour mixture into Bundt pan or ring mold.
  13. Refrigerate 4 hours or overnight until jelled.
  14. To serve, unmold mousse onto a large serving plate.
  15. Spoon remaining 1 cup of cherries into the center of mousse.
  16. Serve with vanilla sauce.
  17. Vanilla sauce:
  18. Stir brandy into low fat vanilla ice cream and blend well.
  19. Try adding some Grand Marnier into the sauce for a different flavor.
