  1. Blend all dressing ingredients.
  2. Chill for at least two hours.
  3. Combine salad ingredients.
  4. Add scant amount of dressing,
  5. Toss to coat.
  6. Serve extra dressing on the side.
  7. Sliced water chestnuts are a fun addition.
  8. Mom sometimes added a well drained can of tuna to this, too.
