Spinach Mushroom Toss

Ingredients:

  • 3/4 tsp salt
  • 1 generous dash(es) freshly ground pepper
  • 8 oz mushrooms, sliced (about 3 cups)
  • 1/4 cup olive or vegatabe oil
  • 1-2 tbsp sugar

Directions:

  1. Mix vinegar, salt, garlic and pepper; toss with mushrooms and let stand 15 minutes.
  2. Toss spinach and oil until leaves glisten. Toss mushroom mixture with spinach. (I sometimes add sliced strawberries)
