  1. Cut the meat, potatoes, carrots, pepper, garlic, and onion and set aside.
  2. In a large roaster or Dutch oven, brown meat in 2 tablespoons of oil.
  3. Add stock, potatoes, carrots, bell peppers, garlic, onion, spices, and salt then cover the pot and simmer for two hours.
  4. While cooking, brew the coffee.
  5. At the end of the two hours, stir in the tomatoes with the juice, then add the coffee and stir gently to incorporate.
  6. To prepare the pumpkin, wash the outside thoroughly then cut a large circle around the top stem, about 6 to 8 inches.
  7. Remove the top and set aside until ready to bake.
  8. Scoop out the seeds and loose fibers and discard. (Seeds can be dried or roasted for other recipes, if you desire.)
  9. Clean the bottom of the top of any seeds or loose fibers, too.
  10. In a shallow but sturdy baking pan, place the pumpkin in the center, then carefully spoon in the stew.
  11. Replace with the top and brush all the outside of the pumpkin with one tablespoon of oil.
  12. Bake for one hour, 45 minutes to two hours at 325ºF. or just until pumpkin is tender (easily pierced with a fork.)
  13. To serve, scoop out some of the pumpkin meat along with a hefty serving of the stew.
