Coconut Beer Shrimp

Ingredients:

  • 1/2 cup flour , all purpose
  • 1/4 tsp. baking powder
  • 1/8 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup beer ( reserve 1/2 )
  • 2 cups veg. oil
  • 1 cup jesabel sauce ( recipe to follow)

Directions:

  1. In mixing bowl sift together the dry ingredients. slowly add the beer. whisk briskly and let stand 1 hour. Drink reserved beer ! Heat oil to 375 . whip egg white and fold into batter.dip shrimp in batter and roll in coconut or vice versa. fry for 2-3 min or golden in color. serve at once with sauce on side.
