Ingredients:

  • 1 cup flour
  • 4 tsp sugar
  • 1 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 2/3 cup beer

Directions:

  1. Measure out 2/3 cup beer-drink rest.
  2. Preheat oven to 375°F.
  3. Spray 6 muffin cups with nonstick cooking spray.
  4. Spoon flour into measuring cup& level off.
  5. Combine flour, cheese, sugar, baking powder, baking soda, and salt and mix well.
  6. Add beer and egg, and stir into dry mixture until just moistened.
  7. Divide evenly into muffin cups (about 3/4 full).
  8. Bake 17-22 minutes, or until golden brown and toothpick inserted into center comes out clean.
  9. Best served warm- great with chili or tortilla soup.
