Coconut Beer Shrimp

This dish could be an appetizer or main dish. we dip these in jezabel sauce.
Ingredients:
1/2 cup flour, all purpose
1/4 tsp. baking powder
1/8 tsp. baking soda
1/2 tsp. salt
1/2 cup beer ( reserve 1/2 )
2 cups veg. oil
1 egg white
1 lb. shrimp peeled & deveined
14 cup coconut flakes
1 cup jesabel sauce ( recipe to follow)
Directions:
1. In mixing bowl sift together the dry ingredients. slowly add the beer. whisk briskly and let stand 1 hour. Drink reserved beer ! Heat oil to 375 . whip egg white and fold into batter.dip shrimp in batter and roll in coconut or vice versa. fry for 2-3 min or golden in color. serve at once with sauce on side.
