Coconut Banana Bread With Lime Glaze

Ingredients:

  • 2 cups flour
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1 cup sugar
  • 2 large eggs
  • 1/4 cup plain yogurt
  • 3 tbsp dark rum
  • 1/2 tsp vanilla
  • cooking spray
  • 1 1/2 tbsp lime juice

Directions:

  1. Preheat oven to 350
  2. Combine flour, soda, salt.
  3. Cream butter and sugar, add eggs one at a time. Beat well.
  4. Add bananas, yogurt, rum and vanilla. Beat well.
  5. Add flour mixture, beat at low spead until just moist.
  6. Stir in 1/2 cup coconut.
  7. Spoon batter into greased loaf pan. Sprinkle with 1 tbsp coconut.
  8. Bake 1 hour or until a wooden pick inserted in center comes out clean.
  9. Cool in pan 10 minutes. Remove from pan.
  10. Combine powdered sugar and juice, stirring with a whisk; drizzle over warm bread.
  11. Enjoy!
