Almond and Strawberry Bread

Ingredients:

  • 1 cup flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 6 tbsp sugar
  • 1 egg
  • 1/2 cup plain yogurt
  • 1/2 cup slivered almonds
  • 1/2 cup confectioners' sugar
  • 1 -2 tbsp milk , as needed
  • 1 dash red food coloring (optional)

Directions:

  1. Preheat oven to 350 degrees F.
  2. Grease a 7-1/2 x 3-1/2 inch loaf pan (actually, any size works; adjust baking time accordingly).
  3. In a small bowl combine flour, baking soda and salt.
  4. In a large bowl, cream together sugar and butter; add egg and almond extract and beat until fluffy.
  5. Add flour and yogurt alternately to creamed mixture.
  6. Fold in almonds, then strawberries.
  7. Turn batter into prepared pan and bake 45 to 50 minutes at 350 degrees F or until toothpick or knife inserted all the way to bottom comes out clean.
  8. While bread is baking, combine the glaze ingredients.
  9. Let bread cool in pan.
  10. While bread is still warm, drizzle with almond glaze.
