Cinnamon Topped Banana Muffins

Ingredients:

  • 1 3/4 cup sugar
  • 2 eggs
  • 4 large bananas
  • 2 tsp salt
  • 1 tsp cinnamon
  • 1 tbsp sugar

Directions:

  1. # The bananas should be very, very ripe - almost black. You will also need a bread pan for baking the banana bread.
  2. # Begin by preheating the over to 350 degrees and greasing the bread pan. Now, we will mash the bananas, using either a fork or a potato masher.
  3. # Mix Banana Bread Ingredients
  4. # In a large bowl, mix together the bananas, the sugar, the egg and the apple sauce. In a separate bowl, mix together the flour, the baking powder, and the salt. Now, gradually add the dry ingredients to the wet ones, stirring as you go.
  5. # Bake the Banana Bread
  6. # Fill the bread pan approximately 1/3 full and put it in the oven. Let the banana bread bake for about an hour, until it starts to turn dark brown. You should be able to stick in a knife and have it come out clean. Let it cool in the pan before removing and slicing.
