Cinnamon Coffee Cake

Ingredients:

  • 1 cup shortening
  • 2 cups sugar
  • 1/2 tsp salt
  • 3 cups flour
  • 1 cup milk
  • 1 tsp vanilla
  • 3 tbsp sugar
  • 3 tbsp cinnamon

Directions:

  1. Preheat oven to 350F, and spray a bundt pan with non-stick cooking spray.
  2. In a large bowl, cream the shortening and the sugar using an electric mixer.
  3. Add eggs and mix well.
  4. In a separate bowl, combine salt, baking powder and flour.
  5. Mix the vanilla with the milk in another bowl.
  6. Add flour and milk alternately to the shortening mixture; I add about 1/3 at a time.
  7. Mix together sugar and cinnamon.
  8. Layer 1/3 of the batter into the pan, then 2 tablespoons of the sugar/cinnamon.
  9. Repeat twice.
  10. Bake for 1 hour, or until done.
