Hickory Nut Cake With Brown Sugar Fudge Frosting

Ingredients:

  • 2 cups sugar
  • 2/3 cup butter
  • 3 eggs
  • 1/8 tsp salt
  • 2-1/2 cups all purpose flour
  • 1 cup milk
  • 1 tsp vanilla
  • 1 cup hickory nuts, chopped (reserve a few halves for garnish)
  • 1/2 cup butter
  • 1 cup packed brown sugar
  • 1/4 cup milk or cream
  • 1 tsp vanilla

Directions:

  1. Cream together sugar and butter for cake
  2. Add eggs; beat on medium speed on mixer for 2 minutes
  3. Mix dry ingredients together lightly with a fork.
  4. Add to creamed mixture alternately with milk.
  5. Mix well.
  6. Stir in vanilla and nuts.
  7. Pour into a greased & floured13-in. x 9-in. x 2-in. pan or two 8-in. pans.
  8. Bake at 325 degrees for 45 - 50 minutes.
  9. Cool.
  10. ******FROSTING******
  11. Melt butter in medium saucepan.
  12. Add brown sugar; boil for 2 minutes.
  13. Add milk; bring to boil
  14. Remove from heat; cool to lukewarm.
  15. Beat in sugar and vanilla. (Add 1/2 cup chopped hickory nuts, if desired)
  16. Frost cake.
  17. Garnish with reserved hickory nut halves
