Ingredients:

Directions:

  1. Preheat oven to 375*. Prepare two muffin tins with paper/parchment liners.
  2. Combine oat flour, coconut flour, baking powder, baking soda, and sea salt.
  3. In a separate bowl, beat egg whites until they form peaks.
  4. In a third bowl, whisk together canola oil, honey, molasses, vanilla, buttermilk, milk, and egg yolks.
  5. Add the wet mixture to the dry and mix until just combined.
  6. Stir in the chocolate chips.
  7. Fold in the egg whites using a flat spatula.
  8. Using a disher, scoop into lined muffin tin (fill 75%-100%).
