  1. Heat oil and add potatoes, onion, 1/2 of the poblano and salt. Cook, covered, stirring often for 12-14 minutes. Add broth, tomatoes, spices, and remaining poblano. Cook for 1 minute, deglazing the pan. Season the cod w/ salt and pepper and place on top of vegetables. Cover and simmer 8-12 minutes until potatoes are tender an fish is opaque throughout.
