Chicken, Spinach & Pasta Salad (Served Hot!)

Ingredients:

Directions:

  1. Bbq the chicken according to the directions for Low Fat Italian Dressing Chicken, slice.
  2. Cook the noodles in boiling water until done, drain and set aside.
  3. Mix the dressing ingredients and set aside (you can do this way in advance).
  4. Make sure to have the chicken, noodles & dressing done before you continue cuz it goes fast from here and you dont want the spinach to overcook and disintegrate.
  5. Heat 2 tbs olive oil in a large skillet, once hot cook the onions and bell peppers for 2 minutes.
  6. Add mushrooms and cook for 2 more minutes.
  7. Add dressing, tomatoes and artichokes and cook for 1 minute to heat through.
  8. Add spinach and cook for 1 minute stiring constantly.
  9. Throw in chicken and noodles and toss!
  10. Sprinkle with parmesan cheese and enjoy!
