Chicken & Rice Supper

Ingredients:

Directions:

  1. Cut chicken ito bite size pieces.
  2. Brown in 1 Tablespoon of oil in a large skillet.
  3. Meanwhile zest lime and then juice into a small bowl.
  4. Add to juice and zest, ginger, curry, & garlic.
  5. Remove chicken from pan
  6. Add 1 Tablespoon of oil and onion, cook 2-3 minutes.
  7. Add rice and curry mixture.
  8. Open peaches and drain juice into a large measuring cup.
  9. Add water to juice until it measures 2 1/2 cups of liquid.
  10. Stir into the rice, add chicken on top of rice.
  11. Cover and simmer 25 minutes.
  12. Add peaches to mix, cook one minute to warm peaches.
  13. Serve & enjoy!
