Ingredients:

Directions:

  1. Drain liquid from canned pineapple into a small mixing bowl.
  2. Add soy sauce and ginger and stir.
  3. Pour the mixture into 8x8 baking dish and place chicken inside.
  4. Turning once to coat both sides.
  5. Marinade for at least and hour but as long as overnight.
  6. Sprinkle pineapple, onion and coconut on top of chicken
  7. Place in oven and bake at 350 F for about an hour and a quarter.
  8. Serve on rice.
