Chicken Curry Salad

  1. Season chicken breasts with salt, pepper and olive oil.
  2. Grill until not pink in the middle - about 5-7 min on each side.
  3. Let chicken cool and cut into cubes and place in a large bowl.
  4. In a seperate bowl combine mayo and vinegar - use only as much to thin the mayo.
  5. Add curry, garam masala and black pepper - whisk and add salt to taste.
  6. Add celery, apples and almonds to chicken.
  7. Slowly add mayo mixture to chicken.
  8. Chill and enjoy!
