Cheese Quesadillas With Sweet Vidalia Onion

Ingredients:

Directions:

  1. In large skillet, melt butter over medium heat and saute Vidalia Onion until softened.
  2. Lay tortillas on work surface and sprinkle half of cheese on half of each tortilla.
  3. Divide Vidalia Onions evenly among tortillas, placing over the cheese.
  4. Top with red pepper and cilantro.
  5. Sprinkle remaining cheese over cilantro leaves.
  6. Fold plain half of tortilla over filling and press down gently.
  7. Heat large, lightly greased nonstick or cast-iron skillet over medium-high heat.
  8. Place folded quesadillas in hot pan; cook until golden brown, turn and cook other side.
  9. Remove from pan and cut each into 3 triangles.
  10. Serve warm.
